Paneer Potato Cakes

In the last few months I have discovered a few new ingredients that I absolutely love! The first of these is a spice called asafoetida, a deeply pungent smelling spice that, when cooked, adds a smooth onion flavor.   A little of this spice makes a big difference as far as complexity of flavor is concerned.  The other ingredient is chickpea flour.  I was inspired to try this from a cooking show where the presenter made sweet potato...

Beef Shawarma Meatballs

Not long ago I had lunch at a little Lebanese restaurant and I discovered some really wonderful new dishes. One of these was shawarma, a meat mixture that is marinated in a spice blend, placed on a spit, and slowly grilled.  It is sliced thin and served with pita and other fresh garnishes.  It is very similar to a gyro but with distinctly different spices.  I fell in love!  The restaurant owner, of course, would not share their recipe...

Roasted Red Pepper Hummus

Summer is in full swing, and that means in North Texas it is HOT, HOT, HOT! Mini-Vegetable Quiche

Before we begin I have some exciting news!  My Beef Empinadas recipe was selected as a finalist in the Ro*Tel Across America contest!  Voting is open and you can vote for your favorite recipe here! I am a big fan of quiche.  If made properly it is the perfect balance of crust and eggy, cheesy filling.  Growing up my mom would always make quiche for Christmas morning brunch, and as an adult I have made quiche for brunch many times.  By...

Bourbon Bacon Jam

I have been meaning to make this recipe for a long while now. Ever since Kevin on Top Chef and Lisa at Homesick Texan made their versions of bacon jam I have been dreaming of the day when I would make mine.  Like any jam you can make it any flavor you like best.  I like bourbon and I like maple syrup. Those flavors, with their earthy caramel notes and natural sweetness, are the perfect foil to salty, smoky bacon. I recommend you get...

Cream of Chicken Soup

I always forget how easy soups are to make.     One of my favorite soups is cream of chicken.  For the longest time I would buy the soup from the deli of the grocery store because I quite simply never thought to make it myself.  I am kicking myself about it now because not only is it dead simple, it tastes far better than anything I have purchased.   What I like is that I control the content of the soup, so if I want more carrots or...
