Ingredients
  • 1 cup butter, at room temperature
  • ¾ cup sugar
  • ¼ cup honey
  • ¼ cup peanut butter
  • 1 egg
  • 2 teaspoons vanilla
  • 2½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup chopped honey roasted peanuts
  • 1 cup dark chocolate chips
Instructions
  1. Heat the oven to 350 F and line two baking sheets with baking parchment.
  2. In the work bowl of a stand mixer fitted with the paddle attachment, or in a large bowl with a hand mixer, combine the butter, sugar, honey, and peanut butter. Mix on low speed until well combined, about 1 minute. Add the egg and vanilla and mix until completely incorporated, about 30 seconds.
  3. Add the flour, baking soda, and salt and mix on low speed until just combined, about 20 seconds. Add the peanuts and chocolate chips and mix until well combined, about 20 seconds.
  4. Scoop the dough by rounded tablespoons onto the prepared baking sheets. Use your fingers to gently flatten the dough. Bake for 7-10 minutes, or until the cookies are golden brown around the edges and set. Let the cookies cool on the pan for 5 minutes before transferring to a wire rack to cool completely.
