Nearly a year ago …

Wow … time really goes by fast!!!

It is about one year ago this month that I made the decision to go to culinary school, and it was one of the best decisions I have ever made.  There is so much I still have to do but I am still so excited, one year later, about where I am going and what I am learning. 

Has it been easy?  No, but it has not been as hard as I thought either.  The best part is learning, growing, and getting closer to my dream.  The worst is the LONG hours.  Working all day then going to class until 10pm, or later, is hard. 

Next semester I have registered for Advanced Pastry and Hospitality Management.  I just finished the Maymester of Bakery Operations and Management.  It was a good class and I am glad I took it.  I am fairly confident I did well.  Starting in July I will be taking some cake decorating classes outside of my regular school.  I have no illusions of being an expert when I am finished, but I need to learn more than I have been able to learn on my own, and with my schedule I am not sure if I will EVER be able to take the cake decorating classes at school.

I am also in the process of starting-up a personal chef and in-home catering service.  That may or may not work out, but I am going to give it a shot over the summer and see how it goes.  Even three clients would be enough to start the “Ms. Shenanigan’s Dream Bakery Fund”.  🙂  I shall, as always, keep you all posted.
