Waiting for grades, and other observations

Grades come out this week at school.  They are posted tomorrow the be precise.  I am having a hard time waiting because, and this is typical of me, I am impatient.  I am the girl standing in front of the microwave willing the pop corm to pop faster … or conversely scavenging for crackers because the three and a half minutes I have to wait are far too long and I will die of starvation before that pop corn is ready!

Patience, not a virtue I possess.

Last night I made Nigella's One-Pan Sage-and-Onion Chicken and Sausage.  I will post a pic I took because it looked, and consequently was, quite yummy!  I did modify the recipe by using skinless and boneless chicken breast and I used 4 spicy andouille sausages cut in half.  Tonight I will turn the leftovers into Spaghetti alla Carbonara with roasted chicken and andouille sausage.  I'm hoping the addition of chicken and sausage to the spaghetti will stretch it so I have dinner tomorrow too.  We shall see.

I have Pumpkin Bread to make, bags of assorted cookies to assemble, and hot cocoa mix to put into these nifty screw top plastic cups.  Oh, and two turkeys to pull out of the freezer to thaw.  I am starting to feel the Christmas Pressure and I find that I am not as ready as I have been, but with school I have a good excuse.  I will say this, my Christmas cookies have never come out so darn well before!!  I suppose that is a good trade.

My one Christmas wish, if I do not post again before Christmas (and I will be sure to take lots of pictures so you can see the ginormous spread we do), is for everyone to have a safe, happy, healthy, and peaceful holiday.
